English version at the end of the French book – The first book by the young and talented double Michelin star chef, La Marine is most of all a human and professional adventure, but also the expression of atypical labor.
He constantly strives to work with fresh, quality ingredients. Still, not everything was easy at first, and Jacky Durand had to adapt and persevere. After eight years of a struggle, he won his first Michelin star in 2007 – for him a consecration. Then in 2013 came the second.
This book reflects a willingness to transmit to younger generations a desire, a passion and techniques. The authors wish to share their love for cooking and above all for La Marine, Alexandre Couillon’s restaurant. Originally from Senegal but having lived on the Isle of Noirmoutier for years, Alexandre Couillon is a young chef who already can boast a Michelin star and an avid fan of the sea, so much so that he doesn’t hesitate to go and collect shellfish himself. With his wife Céline, he reigns over two restaurants on Noirmoutier today -- La Table d’Elise and La Marine. Both enjoy widespread renown.
Alexandre Couillon is one of the four French chefs featured in the the documentary Chefs’ Table on Netflix. English version at the end of the French book.
